Over 13 years ago Wild Flour created breads from traditionally European recipes. To build a customer base, owners Dolly, Greg, and Josh went into the local neighborhood, giving bread to families and asking them to visit their store. Soon business was booming and Wild Flour started making pastries, cookies, and other delectable treats. Next, they created sandwich selections that could be made from these breads and offered two soups a day. Today Wild Flour has four retail locations serving Downtown, Bay View and the South Side. Since we are a Woman Owned Business, Dolly Mertens wanted to offer something different from the other bakeries in the area. Providing a healthy option was at the top of her list. With that in mind she researched and found that European breads offered the healthiest option. Our breads do not contain any fats/oils, sugar, eggs, dairy, or preservatives. People ask, “Then why do they taste so good?” It is the quality and type of flours used in making each product. Traditional old world recipes offer the best in health and taste. For those who are allergic to commercial yeasted products, we offer our great sour dough selections. We also have exotic breads like our cranberry walnut and olive rosemary that compliment so many meal options. About three years ago we developed sourdough multi grain bread that has become one of our best sellers. For the heart healthy we make a whole grain flax seed bread. If you are going to eat bread, why not eat the healthiest.

Recently Wild Flour was selected by the SBA(Small Business Administration) to join their E200 Program. This federally funded measure picked 200 emerging businesses in ten different major cities, including Milwaukee that is poised for inner city growth. We feel fortunate that we were selected as one of the businesses to participate. Our company looks forward using what we have learned to improve our operations and marketing.
